Easy Egg Breakfast Muffins

Many Calgary families find themselves rushing around every morning to daycare, work and school. Often the children manage to get breakfast or a quick snack on the way out the door, but parents go without due to time restrictions and pure hassle. That does not need to be the case. Parents need their morning breakfast nutrients just as the children do!

Easy Egg Breakfast Muffins take no time at all!

Making healthy breakfast choices are important for not only children, but adults as well. Parents who do not get their essential vitamins and nutrients will feel run down, have a lack of energy and may not be up to the changing schedules that many children have continuously. By taking a little time to prepare, you are sure to have a healthy and fulfilling breakfast each day!

Easy Egg Breakfast Muffins

  • 1 egg
  • 1 1/2 strips of bacon
  • salt & pepper to taste
  • additional items as you prefer (spinach leaves, cheese, peppers, tomatoes, onions, etc.)

Begin by pre-cooking bacon about half way, you don't want it to be crispy as it will continue to cook afterwards. Place 3 short strips of bacon in the bottom of a muffin tin (1 1/2 strips cut in half) without a muffin liner. Mix up 1 egg in a bowl with salt/pepper and any additional items you may want (including onions, cheese, peppers, spinach, etc.). Pour into muffin tin on top of bacon strips. Cook in the oven at 350 degrees for approximately 15 minutes, or until egg is sponge-like. Remove, cool and pack into Ziploc bags for future.

Remember that Mom and Dad need a healthy breakfast as much as the kids do! By taking 10 minutes to prepare ahead of time, you can also have a great breakfast on-the-go!
