Looking for a fun dessert to go with tacos or other Mexican favorites? Try these tasty ice cream sundaes the whole family is sure to love!
Mexican Ice Cream Sundaes (4 large or 6 smaller servings)
3/4 cup sweetened flaked coconut
2/3 cup heavy cream
6 oz bittersweet chocolate chips
1 t. ground cinnamon
Dulce de leche ice cream
1/4 cup peanuts (if avoiding nuts, substitute mini chocolate or butterscotch chips)
Toast coconut until brown in a 350 degrees oven (8-10 minutes) tossing occasionally.
Dish up ice cream (you’ll be adding warm topping so you don’t want it to sit while you deal with the ice cream)
Bring cream just to a boil and remove from heat.
Stir in chocolate and cinnamon: let stand about a minute and then whisk until shiny and all the chocolate is melted.
Pour warm sauce over ice cream and sprinkle with coconut and nuts and/or chips.
