Chicken is still relatively inexpensive and can be used in various ways to make delicious lunches and dinners.
The recipe below is a good, easy basic chicken crock pot recipe. Using a whole chicken cut-up works well as does just boneless skinless chicken breasts. You can purchase packages of all chicken breasts, thighs or legs which your favorite part of the chicken can be used.
Colorful vegetables such as cooked carrots or zucchini or a side garden salad can be added to your meal along get some hot bread.
Slow Cooked Chicken Supreme
Ingredients:
- 1 whole chicken (cut-up) or 6 to 8 chicken breasts
- 1 can mushroom soup
- 1 pkg. onion-mushroom soup mix
- 2-1/2 c. milk
- 4 to 6 servings of cooked white or brown rice or cooked noodles.
Directions:
In large skillet brown chicken in hot oil, remove chicken and place in crock pot. Sprinkle package of soup mix over chicken. In mixing bowl combine cream of mushroom soup and milk until smooth, pour mixture over chicken, cover with lid and cook on low for 8 hours.
After 8 hours, if desired add a bit more milk to the sauce and continue to heat it in crock pot. Serve chicken and sauce over rice or noodles.
