Roast beef and the crock pot are a perfect pair – slow cooking a roast for a few hours makes it so tender you can literally cut it with a fork. Not to mention that the crock pot or slow cooker is the busy person’s friend – add a few ingredients to the pot, plug it in and voila . . . ! This beef recipe is no exception; there are only three ingredients. Put it together in the morning and come home to dinner already made. The taste and tenderness of the beef is amazing, and the aroma as it cooks is wonderful!

Coconut milk can be purchased in most any grocery store. Look for it in the Asian section of the international foods aisle. You can buy a regular version or a lite version (that has a bit of the fat removed). It adds such a good flavor to so many recipes, you will want to keep a few cans on hand. (Make sure you purchase coconut milk, not coconut water – makes a big difference in the taste!)

Easy Crock Pot Beef Recipe

Ingredients for Easy Crock Pot Beef:

  • 2-pound beef roast (or whatever size fits into your crock pot)
  • 1 can coconut milk
  • 2 medium onions, quartered

Directions for making Easy Crock Pot Beef:

Put one of the quartered onions on the bottom of the crock pot. Place the beef roast on top of the onion. Put the pieces of the other onion over the top of the beef. Pour the entire contents of the can of coconut milk evenly over the top of the beef. Cook on the lowest setting for approximately 8 - 10 hours. Serve the onion with the roast beef and use the juices to make gravy.
