Crepes are great for breakfast or brunch! Ever have breakfast for dinner? These would make a great dinner treat.
Crepes
- 1 cup pancake mix
- 1 cup water
- 2 eggs
- 2 tbsp. sugar
Heat a small no-stick frying pan on medium heat.
In a bowl, mix all ingredients with a whisk. Whisk until free from lumps.
Place 1 ladle of mixture into pan. This should be a thin layer that just covers the bottom of the pan. When small bubbles appear, flip crepe over in the pan. Cook for about 30 seconds and remove onto a plate.
Continue until you run out of mix.
Filling
- Sour cream
- Strawberry preserves
To fill crepes, spoon sour cream onto a crepe and then add preserves over the top.
Place filling toward one side of the crepe.
Fold over the side of the crepe closest to the filling and roll crepe.
You can experiment with your fillings. You can also try:
- Melted chocolate and bananas
- Cream cheese and preserves
- Bananas and caramel ice cream topping
- Peanut butter and jelly
- Nutella and whipped cream
- Fluff and preserves
- Peanut butter and bananas
