National Corn Dog day is the first Saturday of the NCAA men’s basketball tournament, which falls on March 19 this year and March 17 in 2012.

Can’t Eat Just One Corn Dog Recipe
Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup milk
2 packages hotdogs
16 wooden skewers
oil for frying
Directions
Mix together cornmeal, flour, sugar, baking powder and salt
Stir in the egg and milk
Pour batter into a large drinking glass or a mason jar and chill batter in refrigerator until needed ~ the cold will help keep the batter from pulling off the dogs when cooking.
Preheat oil in a deep saucepan over medium high heat.
Insert wooden skewers into hotdogs and pat dry with paper towel ~ dry hot dogs will allow the batter to stick
Bring out the chilled batter and roll each hotdog in batter until well coated ~ tipping the jar/glass will make the process easier
Fry 2 to 4 corn dogs at a time until lightly browned, about 3 minutes ~ Don‘t crowd the dogs.
Drain on paper towels or a cooling rack with paper towels or newspapers underneath.
