Easy chocolate cupcakes

I'm always on the lookout for easy dessert recipes. Lately I have been searching the web for easy and delicious cake and cupcake recipes to celebrate my son's birthday. I found this recipe for chocolate cupcakes on the Real Simple website, and it sounded great.

The recipe starts with a boxed chocolate cake mix. After a few simple additions, you are left with moist and light cupcakes. The secret ingredient is mayonnaise. The frosting is just as easy. It only has two ingredients: sour cream and chocolate chips. I was a little skeptical, but it turned out great. These cupcakes are definitely in the running for a birthday celebration.

Easy Chocolate Cupcakes (recipe from Real Simple)

3 large eggs
1 cup mayonnaise
1 box devil's food cake mix
1 cup water
2 teaspoons vanilla
2 cups semisweet chocolate chips
1 cup sour cream

Preheat oven to 350º F. Place papers in 24 muffin-tin cups.

In a large bowl, beat the eggs and mayonnaise. Mix in the cake mix, water, and vanilla. Divide the batter among the cups. Bake until a toothpick inserted comes out clean, about 25 minutes. Cool.

For the frosting, melt the chocolate chips in a double boiler; whisk in 1 cup sour cream. Frost the cupcakes immediately.
