Do you feel like indulging in dessert, but don't want to load up on sugar and fat? Chocolate lovers will delight in this quick and easy chocolate chip banana bread recipe, simple enough for even the most inexperienced baker -- and better yet, this healthy dessert contains Splenda and no butter, so you won't feel guilty after cutting yourself a slice.
All the ingredients in this easy bread recipe can be found at San Antonio grocery stores, although most will probably be in your pantry already.
Easy chocolate chip banana bread recipe -- ingredients
- 2 packets of plain instant oatmeal
- 1 cup of all-purpose flour
- 1/2 cup of granulated Splenda
- 3/4 cup of ground flaxseed (optional)
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 2 large ripe bananas
- 1 egg
- 1/2 cup of non-fat milk
- 6oz. of milk chocolate chocolate chips (about half a bag)
Easy chocolate chip banana bread recipe -- directions
Preheat your oven to 350 degrees, and grease or spray an 8-inch loaf pan (for thicker bread) or a round pan (for a thinner bread.) Combine the oatmeal, flour, flaxseed (if desired), Splenda, baking soda, and baking powder in a large bowl. Stir thoroughly, then mix in your half-bag of chocolate chips.
Set that bowl aside, and in a smaller bowl, mash the bananas, egg, and milk. Add the banana mixture slowly to the larger bowl, mixing as you go. Pour the mixture into your greased pan.
Bake for 23 to 25 minutes, or until you pass the toothpick test. Serves 5 chocoholics or 8 regular people.
