Lemon chicken has an amazing taste that goes with everything. Serve it with a side of rice, pasta, or potatoes; it’s the perfect meal and it’s ready in less than an hour. So whether a quick meal or a delicious dinner for company, lemon chicken is always wonderful. The texture, the taste, and the presentation make it a great choice any time.
If you want the best, most tender chicken, pay attention to the labels the next time you shop. The younger the chicken, the more tender it is and the shorter the cooking time. If the chicken is called a fryer, it’s about 7 - 10 weeks old; roasters are 16 weeks old; stewing chickens are the oldest – you need to “stew” them, or cook them the longest to tenderize them.
Only buy chickens with USDA label grades of A. Look for organic or free-range chickens to know they weren’t shot full of growth hormones. Buy chicken well before the “sell by” date on the front of the package (if you freeze them before that date, you can extend their shelf life). Look for a good even color with no bruising.
Easy Lemon Chicken Recipe
Ingredients for Easy Lemon Chicken:
- 4 chicken breasts
- Olive oil
- 2 lemons
- ¼ cup white wine
- 1 tsp. thyme
- 1 tsp. garlic powder or 2 garlic cloves, finely minced
- 1 tsp. salt
- ½ tsp. pepper
Directions for making Easy Lemon Chicken:
Preheat the oven to 350 degrees. Lightly oil the inside of a baking dish (9 x 13 works well). Juice one of the lemons and slice the other in 8 slices.
Place the chicken breasts in the bottom of the prepared baking dish (space them apart a little). Drizzle each with a little olive oil.
Pour over them the white wine and the juice from one of the lemons. Evenly dust each chicken breast with the thyme, then the garlic, then the salt and pepper.
Arrange two lemon slices on the top of each chicken breast. Bake uncovered in the oven for approximately 45 minutes or until done. Serve chicken breasts with the liquid in the bottom of the pan spooned over the tops of each.
