Easy chicken enchilada recipe

These are so simple to prepare but are full of flavor! This is a great comfort food dish that had come from a great family in the mid-west.

Easy Chicken Enchiladas

  • 1 can of chicken, large (12.5 oz.)
  • Large flour tortillas, 10
  • 1/2 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 can enchilada sauce

Coat bottom of 13x9 pan with enchilada sauce.
In a bowl mix chicken, 1 cup of cheese and salsa.
Place mix into enchiladas and roll.
Place into pan.
Pour remainder of sauce on top.
Cover with foil and bake for 30 minutes at 350*.
Remove from oven and sprinkle with remaining cheese.
