Put this casserole together up to 2 days before you need to serve it!
Breakfast Casserole
- 3 1/2 cup hash browns, frozen
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded monterey jack cheese
- 1/2 cup salsa
- 4 pre-cooked sausage patties (Jimmy Dean), cut into small pieces
- 2 tbsp chopped onions
- 4 eggs, beaten
- 1, (12 ounce) can evaporated milk
- Salt and pepper, to taste
Spray a 9x13 baking sidh with cooking spray.
Add hashbrowns to prepared dish.
Add cheeses, salsa, sausage and onions on top of the hashbrowns.
In a separate bowl combine eggs, milk and salt and pepper.
Pour mixture into baking dish.
Cover with press and seal and refrigerate up to 2 days.
When ready to make, preheat oven to 350*.
Bake for 40 minutes or until knife inserted into center comes our clean.
