This cake would be great to eat after a lovely day out at Keeneland in Lexington. It is wonderful for any celebration.
Dark rum is best to use in the cake, because of its flavor. Captain Morgan is a great brand to use. Enjoy!
Easy bananas foster cake
1 1/2- 2 bananas
1/2 cup vegetable oil
1/4 cup dark rum
1/2 cup sour cream
1 yellow cake mix, 18.25 ounces
1 banana cream pudding mix, 3.4 ounces
1/2 teaspoon cinnamon
1. Preheat the oven to 350 degrees. In an electric mixer or large bowl mash the bananas with a potato masher.
2. Stir in the eggs, vegetable oil, rum and sour cream.
3. Add the remaining ingredients. Beat with the electric mixer for 2-3 minutes, or until combined and smooth.
4. Grease a bundt pan very well. Pour the batter in evenly. Bake for 35-45 minutes or until a knife comes out clean. To garnish sprinkle the cake with powdered sugar mixed with a bit of cinnamon. Enjoy! Serves 8.
