Easy baked potato casserole

Ingredients
8 potatoes, peeled and cubed
1 cup evaporated milk
½ cup sour cream
1 tsp. salt
½ tsp. pepper
2 cups cheddar cheese
6 slices bacon, crumbled
Green onions, chopped

Instructions
Bring water to a boil in a large pot. Boil potatoes for 15-20 minutes, until tender. Preheat oven to 350º and grease a baking dish. After the potatoes have been drained, place them in a mixer and beat together with the evaporated milk, sour cream, and salt and pepper. Fold in the cheese and half of the bacon. Pour this mixture into the baking dish and bake for 20 minutes. Add the rest of the cheese and bacon and the green onions to the top and bake for 5 more minutes.
