Use the freshest ingredients possible, and look for organic options.
Sandwiches are easy fare, and are made in a variety of ways using many different types of ingredients. Try a peanut butter based sandwich, or one made with real meat and vegetables.
Chicken and Vegetable Sandwich
whole wheat pita bread
chicken left over from a previous meal
2 or 3 leaves of lettuce
1 tomato
1 small cucumber
2 Tbsp. + mayonnaise or dressing, optional

Chop the chicken and vegetables and mix them together in a bowl.

Add the desired amount of mayonnaise or dressing, if desired, coating the chicken and vegetables.

Cut the pita bread in half and fill each section with the chicken and vegetable mixture.
Fresh fruits and vegetables offer quick additions to a lunch box. Send two different options along, unless the main portion of the lunch provides a serving of one or the other. Easy choices include:
baby carrots
a small banana
a small cucumber
a peach or pear
celery and carrot sticks
As a side, pack a sandwich bag filled with pre-popped popcorn or Sun Chips. A snack size plastic bag can be filled with homemade trail mix as an alternative:

Simply combine all of the ingredients in a bowl and mix. Store in quart size canning jars.
Fill a thermos with milk or water for a healthy beverage. It is possible to keep the liquid cold by freezing a small amount of the liquid in and uncovered thermos over night, then adding fresh liquid in the morning.
