Here is a recipe that utilizes the cinnamon roll mix to make scrumptious blueberry turnovers. The dough is simply made following the package directions; it calls for applesauce, unsweetened maybe used, which still produces a delicious result while reducing sugar. The filling is made with fresh blueberries and honey goat cheese, these flavors meld together to create a melt in your mouth turnover guaranteed to satisfy even the pickiest eater. These turnovers taste their best right out of the oven or maybe enjoyed at room temperature or cold as well. Enjoy.
Blueberry Turnovers
1 pkg Chebe Cinnamon Roll Mix,
1 egg
2 T oil (preferably coconut oil)
2 T unsweetened applesauce
Preheat oven to 375 degrees.
Prepare using directions on package for fruit turnovers.
Filling
1 pint blueberries, washed and drained (divided, set aside 1/3 of berries for later)
1 T lime juice
1 T coconut oil
3 T Stevia
2 oz honey goat cheese or plain goat cheese
Add all ingredients except cheese into small sauce pan. Bring to a boil and then reduce to a simmer. Simmer for about 10 minutes or until berries are very tender, using an immersion blender or blender or whisk blend the mixture together until mostly smooth. Add in the cheese and stir until smooth, add the rest of the berries. Add a spoonful of mixture into middle of dough squares and crimp edges. Butter or egg wash can be used on the top to increase browning. Bake 15 to 20 minutes until light golden brown and crisp on outside.
