Busy families are always looking for easy, quick meal ideas that can save time in the kitchen and keep them out of the drive-thru lane. Chicken Spaghetti Casserole is a delicious dish that requires very little time or money to put together. This dish is a favorite around my house and something my kids ask for time and time again.
This recipe is vegetable versatile and it's a great dish for sneaking in that daily serving of veggies for picky kids. Chicken Spaghetti Casserole is just as fantastic when combined with healthful additions such as broccoli, green peppers, or tomatoes.
This cheesy casserole is also a simple and satisfying dish to serve for guests. It keeps well and can be prepared a day before; do the work ahead of time and simply place the casserole in the oven to warm up when needed. Pair it up with some steamed carrots or a fresh, green salad to make it a complete meal. A little garlic toast on the side of a tasty pasta dish never hurt a soul either. Enjoy.
What you will need:
- 1-2 tablespoons butter or margarine
- 1/2 yellow onion, chopped
- 2 celery ribs, chopped
- 1 can (10 3/4 oz) cream of mushroom soup (regular or 98% fat free)
- 1 can (10 3/4 oz) cream of chicken soup (regular or 98% fat free)
- 1/2 cup milk
- 1 cup shredded low-fat cheddar or American cheese
- 1/2 cup Parmesan cheese
- 1 package (16 oz) spaghetti noodles, cooked
- 2 cups cooked, cubed or shredded chicken
- Heat the oven to 375 degrees.
- In a heated Dutch oven melt the butter and add the onions and celery. Sauté the vegetables for about 3 minutes or until onions are soft.
- Pour both soups and milk into the pan. Mix the soup and the vegetables well.
- Add in the cheddar and Parmesan cheese to the soup mixture.
- Mix in the cooked spaghetti noodles and cubed chicken and mix well.
- Transfer chicken spaghetti casserole to a large baking pan.
- Top with extra cheese, if desired .
- Heat in the oven for 25 minutes or until warm all the way through.
