The kind of cheese you use matters
Liberty Market in Kettering carries certified organic grass-fed cheese: cheese from cows raised naturally on a grass-fed diet. Grass-fed cheese helps your body fight and prevent illness, increases your energy levels, and provides maximum nutrition and taste.
Why grass-fed?
85-95% of dairy cows are raised in confinement on a diet of grain, particularly corn, because it’s cheaper for big agribusiness. Grain-based diets are not natural or healthy for cows, causing them to be more prone to ill health. To avoid illness related to their poor diet, large agrifarms feed antibiotics to the cows, along with growth hormones to promote excessive milk production and excessive profits for the mega-farms. The drugs are excreted in the cow’s milk and ingested by the consumer. Concerns have been raised that widespread, routine use of antibiotics in livestock is promoting drug-resistant bacterial infections that affect humans.
Liberty's grass fed cheese:
- Is made from Certified 100% organic milk
- Is free of all antibiotics and growth hormones
- Contains a perfect balance of omega-3 and omega-6 fats, a ratio ideal for your health
- Is very high in conjugated linoleic acid, a potent cancer-fighting compound. Grass-fed cheese contains five times more CLA than dairy from grain-fed cows.
- Is considerably higher in beta-carotene, vitamin A, vitamin D, and vitamin E than cheese and other dairy from grain-fed sources.
- Is high in calcium and protein

Easy macaroni and cheese
- 3 tablespoons butter
- 2 ½ cups uncooked macaroni
- 1 quart milk
- ½ pound cheese, shredded
Bread crumb topping
- 4 tablespoons butter
- 1/2 cup bread crumbs
Melt butter in skillet, add crumbs and saute til crumbs are brown.
To make casserole:
Preheat the oven to 350 degrees. Put margarine in a 2-quart casserole and put it in the oven to melt. Pour macaroni in casserole and stir to coat with melted margarine. Toss shredded cheese with macaroni and pour milk over all of it. Do not stir and do not cover while baking. Bake for one hour, topping with bread crumb topping the last 20 minutes of baking.
