First Course: Marinated Hawaiian Striped Marlin with ginger, grapefruit and Vietnamese coriander, paired with Chardonnay
Second Course: Grilled Beef Short Rib with baby gem lettuce and hen of the woods, paired with Cabernet Sauvignon
Third Course: Creme Fraiche Cheesecake, biscotti, pistachio, apricot sorbet, paired with Moscato
Starting the meal was the Sauvignon Blanc. This bright, vibrant citrus wine awakens the palate. With flavors of Meyer lemon and key limes, this wine is light and crisp which works beautifully with a chilled summer soup.
Following the small bite, the first course of marlin was served with the Cupcake Chardonnay. With a slight toasty oak nuance, this buttery wine is excellent with a ceviche style fish. The subtle spice from the wine enhances the delicate fish.
With the main course, the full-boded Cabernet Sauvignon offers a bold, juicy flavor to balance the richness of the grilled beef short rib. With berry notes and silky tannins, the rich red wine enhances the earthiness of the main course.
Ending the meal on a toast was the Cupcake Moscato with the Creme Fraiche Cheesecake. This slightly sweet bubbly wine balances the savory aspects of the cheesecake. With a hint of tropical flavors, the Moscato offers a light finish to a delicious meal.
