Dried Cherry and White Chocolate Bread Pudding

Here’s a wonderful bread pudding recipe from Kent Rathbun at Dallas’ Abacus. Enjoy as a dessert or even on Christmas morning!

BREAD PUDDING – Kent Rathbun, Abacus


1 French baguette
8 ounces white chocolate, chopped
8 ounces dried cherries
1 cup sugar
1 tablespoon cinnamon
1 teaspoon nutmeg
6 large eggs
2 cups heavy cream
2 cups milk
1 tablespoon vanilla extract
4 ounces butter
4 ounces cherry jelly


Place sliced bread in a large mixing bowl.
Add white chocolate and dried cherries.

In a separate mixing bowl mix together sugar, cinnamon and
nutmeg. (Set aside about 1/4 cup of this mixture for later.)
Add to the sugar mixture the eggs, cream, milk and vanilla
and mix thoroughly.

Pour mixture over the bread and mix, making sure all of the
bread is soaked.

Transfer to a large greased baking pan.Evenly place the butter slices on top and sprinkle remainingsugar mixture over the top of the bread pudding.

Bake at 325 degrees until golden brown.
Remove from the oven, spread cherry jelly evenly on top and serve
