Dr. Rob Thompson: It's not fat but starch contributing to obesity, heart disease and diabetes

Obesity, heart disease, and diabetes have been on the rise for the past few decades with seemingly no end in sight. It should be obvious to anyone with a brain that whatever we are doing differently now than we did before this astronomical rise began in the 1970s should be corrected immediately. And maybe, just maybe the answer to this issue that baffles the so-called health “experts” and government health agencies could be what we have added into our diet when we pushed for the removal of fat from our diet.     You hit the nail right on the head in pointing out that starch is a major player in the obesity epidemic. But the starch causing the problem is from wheat, which is now mostly genetically modified, and then over-refined until the remaining product has no health benefits and many negative impacts on the human body.

    It is true that traditional fat consumption, especially animal fat, has gone down a great deal in the last four decades. Unfortunately, we have replaced those calories with bread, sugar and it's evil twin Skippy (high fructose corn syrup), and the worst ones of all, hydrogenated oils and the more than 2400 chemicals now added to our food.

    Animals we consume have also been compromised by the use of growth hormones, steroids, antibiotics and the feeding of animal protein to animals that were not designed to eat animal protein.
