Dr. Alejandro Junger came to our attention when Gwyneth Paltrow praised him for his cleansing detox diet, detailed in his book "Clean -- Expanded Edition: The Revolutionary Program to Restore the Body's Natural Ability to Heal Itself" (click for details). Now he's concocted a fabulous cookbook that helps you create delicious detox recipes, and it was featured on Dr. Mehmet Oz's talk show today.

The title sums up the benefits of this must-have cookbook: "Clean Eats: Over 200 Delicious Recipes to Reset Your Body's Natural Balance and Discover What It Means to Be Truly Healthy." In addition to the recipes, you'll acquire an understanding of the clean eating detox diet and guidance with nutrition.

The book has something for everyone, from Paleo to vegetarian. Recipes are from celebrities such as Gwyneth herself, Dr. Oz, Cameron Diaz and Zoe Saldana. Dr. Junger's French Toast with Vanilla Cream

Ingredients
2 servings

French Toast
4 pasture-raised eggs
1/2 cup unsweetened coconut milk
2 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground clove
1/2 tsp freshly ground nutmeg
Up to 1/4 cup coconut oil
2 to 3 slices gluten-free bread

Vanilla Cream
3 oz unsweetened coconut milk
1 tsp vanilla extract
1/2 cup canned coconut cream
1 to 2 tbsp coconut nectar
pinch of sea salt

Directions
First, make the vanilla cream. Slowly warn the coconut milk, vanilla, coconut cream, coconut nectar and salt until the coconut cream melts and the sauce thickens. Keep this mixture warm while prepping the rest.

Whisk together the eggs, coconut milk and spices in a large shallow dish.

Heat a large skillet or griddle over medium heat and melt a few tablespoons of coconut oil in it. While the skillet warms, transfer four slices of bread into the egg mixture and allow both sides to absorb a lot of the moisture.

Carefully transfer the bread slices onto the skillet and cook until golden brown.

Once cooked through, cut each slice of bread in half, top with fresh berries and drizzle with vanilla cream.

Almond Spice Cookies

Makes: 12 cookies
Prep time: 10 minutes plus 30 minutes to 24 hours refrigeration time
Cooking time: 10 minutes

This is a great cookie recipe to make any time of year, and something kids will love to help with (and of course probably want to lick the spoon and bowl). The dough is as tasty as the cookies, so feel free to use it as you would uncooked cookie dough (aka eating straight from the bowl) or as a post-workout snack that’s easy to travel with in a plastic container.

2½ cups almond flour
2 tablespoons coconut flour
½ cup arrowroot powder
1 teaspoon baking soda
¼ teaspoon sea salt
1 teaspoon ground cinnamon, plus more for sprinkling
¼ cup plus 1 tablespoon coconut oil, melted
½ cup coconut nectar
1 teaspoon almond extract

In a large bowl, combine the flours, baking soda, salt, and cinnamon. Stir in the melted coconut oil, coconut nectar, and almond extract. Mix just until everything is combined.

Wrap the dough in plastic wrap, tightening the sides and shaping it to form a long, even cylinder. Place it in the fridge to solidify, for a minimum of 30 minutes or up to one day.

When you’re ready to bake the cookies, preheat the oven to 350˚F.

Remove the dough from the plastic wrap and slice it into ¼-inch rounds. Place the cookies on a parchment-lined baking dish, and sprinkle each cookie with cinnamon. Bake them for 5 minutes, then flip each cookie and bake them for an additional 4 to 5 minutes, until they feel set.

* Omit coconut nectar; use stevia, xylitrol, or Lakanto
