Feeling fat, fatigued and foggy? Dr. Oz says those unpleasant symptoms could result from a thyroid problem. Although it's just a small gland in your neck, your thyroid plays an important role in balancing the production of hormones and regulating your metabolism. And even a thyroid that's slightly "sluggish" could cause problems such as:
- weight gain
- brain fog
- feeling cold all the time
What to do: Talk with your doctor if you have the above symptoms without obvious causes. A simple test can determine if you have thyroid problems. In addition, try the recipe below to boost both thyroid function and your energy. The reason: High in vitamin A, kale is essential to your thyroid. Add carrots, kelp flakes and sunflower seeds, then top with tahini and a pinch of celtic salt.
Kale Salad Ingredients
Serves 2 to 4
- 1 bunch kale, either curly or tuscan, chopped
- 1/4 cup peeled carrot
- 1 avocado cubed
- 1/2 to 1 tablespoon kelp flakes (iodine)
- 1/4 cup raisins (optional)
- 1/4 cup roasted sunflower seeds (selenium)
- 1/4 cup tahini (zinc)
- Juice of 1 1/2 lemons
- 2 tsp honey
- 1 tsp celtic sea salt (iodine)
- 1/4 cup water
- 1/4 cup olive oil
Directions: Mix the tahini, lemon, olive oil, honey, water and salt until blended. Pour the tahini dressing over kale, kelp flakes, and carrots. Let it sit for at least an hour. Then add the raisins, avocado and sunflower seeds.
This can be made and refrigerated overnight. The kale will break down and become softer from the lemon juice the longer it marinates.
