Don’t throw away those turkey bones, use them to make stock

This flavorful turkey stock recipe is made with leftover turkey bones…

Good cooking begins with good stock. Homemade stock can't even be compared to boxed or canned broths. You simply have a good broth or stock in order to make a good turkey soup, and if you’ve cooked a turkey for Thanksgiving, you already have the main ingredient necessary to make this golden stock yourself.

The rest of the ingredients are easy: onions, carrots, celery, bay leaves, white wine, (it doesn’t have to be expensive) and fresh thyme.

Yields enough turkey stock for one of any number of good soup recipes at your disposal (or other recipes that call for stock for that matter). This stock can be kept in the freezer for weeks and used in countless recipes, so make sure to set aside some of that wonderful golden liquid if you aren’t planning on cooking with it right away. You'll be glad you did, besides the aroma coming from you're kitchen as it simmers will be wonderful.

Put all of the turkey bones in a stockpot. Add one white onion (chopped into four quarters), two carrots (chopped into four pieces each), eight stalks of celery (chopped into four pieces each) and three cups of white wine. Then, pour in enough (cold) water to cover the bones and vegetables. Add four dry bay leaves, a pinch of white pepper, and two sprigs of fresh thyme.

Bring the stock ingredients to a boil, and reduce to low heat. Simmer for at least three hours. Strain.

For a basic turkey soup: Add a chicken base (demi-glace) and white pepper to the stock for flavoring to the finished stock. Add leftover turkey meat, diced carrots and celery and cook till the vegetables are tender. Viola!

    You can also use the broth to make turkey gravy and use the leftover turkey meat for making hot turkey sandwiches just thicken the broth with a mixture of floured and oil mix them together till you form a paste and use the mixture to thicken the broth simply bring the broth to a boil and add the oil and flour paste to the boiling broth and stir using a Wisk at same time thicken to your desire thickening add summer savory and chicken or turkey stock and white pepper to taste
