Don Chido delays opening, still set to open this summer

The delay of the Don Chido opening only further adds to the anticipation of seeing just how the space will be transformed from the formerly loud and colorful glory that was Fred’s Mexican Cafe. Although construction is not completely finished, bits of turquoise tile, a mural of Mexican blankets and a wall of painted skulls touch on only a few of the unique features that will make the space chic and casual all at once. It’s a mix and match of Mexican culture blended together under one streamlined vision. Or, so the plans reveal.

There are still lighting fixtures and flooring that need to be put into place, so a little bit of imagination is necessary to envision what kind of impact this new Gaslamp addition is going to look like.

One big plus is the inclusion of a homemade tortilla station. A ceviche bar, nearly 100 kinds of tequila (just for starters!), and a lounge area with live music will add a unique spin and welcoming vibe to Don Chido. Add in the offering of late night street tacos the restaurant has planned, and it should have no problem living up to its “cool” namesake.

RMD Group (responsible for downtown nightclubs like Fluxx and Sidebar) and chef Antonio Friscia hope for a soft opening in June featuring their menu of handcrafted Mexican cuisine with the restaurant in full swing following the Comic Con crowd in late July. With any luck, San Diegans will be enjoying a plate of chicken mole and a few tequila tasters in no time. Fortunately, it seems like the wait might be worth it.
