On tonight's Food Network episode of “Diners, Drive-ins and Dives,” Guy Fieri took the red Camaro to Portland, Ore. and two stops in New Mexico to find authentic, Mexican, Italian and Chinese foods on this episode titled “Aces of Authenticity.”
First stop; Santa Fe to the Casa Chimayo that used to be the house where the owner, Roberto Cordova was born. In 2011, they hired chef Ernesto Guzman, who was taught by Roberto’s mother how to make the foods they ate all their lives. Guy got the scoop from Ernesto how they make their chicken enchiladas. When Guy saw the giant burlap bag of dried chili peppers, he knew they meant business. When Guy tasted the finished product, he knew he was close to Mexican heaven.
In Albuquerque at Torino’s @ Home an authentic trattoria serving up the best northern Italian food this side of Europe. Husband and wife owners Maxime is from France and Daniela Bouneuo is from Italy and together they run a great restaurant. They state it is not a fine-dining place, just simplicity in a complicated world. Maxime showed Guy how he makes the squid ink pasta with calamari and heirloom tomatoes and fresh herbs. Then they made beef cheek manicotti after preparing the beef cheeks, they pulled them apart similar to pulled pork, then mixed them with ricotta, parmesan cheese and salt and pepper. Then they made pasta, this time without squid ink. The time and detail spent with each dish was amazing. As Guy stated, it was no filler and all thriller; a mixture of the French decadence and Italian rustic.
In Portland, he visited Frank’s Noodle House where they make all the noodles and won tons themselves. Guy met with owner and chef, Frank Fong, who runs the place along with his wife Ying and son Dennis. Guy got a lesson in making noodles. Frank kneads the dough for an hour and a half each day to make the best noodles in Portland and has the arms to show for it. When he finished the handmade noodles with chicken, Guy was in his glory just chowing down on this delightful array of crunchy veggies and delicious chicken and noodles. Are you hungry yet?
