When the garden is yielding more beans than you know what to do with, look to dilly beans to help out. Dilly beans are great as a snack or as a side dish, and make wonderful and frugal edible gifts for the holidays.
4 pounds green beans, washed, topped and tailed
6 garlic cloves, peeled and sliced
1 cup fresh dill
2 tablespoons dill seed
1 tablespoon black pepper corns
4 cups distilled vinegar
2 cups water
1/4 cup sugar
2 tablespoons salt
Snap beans into lengths to fit into pint jars, leaving about 1/2 inch space at the top.
Pack beans vertically into hot jars that have been sterilized in boiling water.
Divide garlic, pepper corns, dill, dill seed into each jar.
Combine vinegar and water in sauce pan, bring to a boil.
Pour hot liquid over the beans, covering beans and leaving 1/2 inch headspace.
Wipe rims clean, place canning lid on top and screw canning ring onto jar.
Process in boiling water bath for 15 minutes.
Turn off heat, allow jars to rest in canner for 10 minutes.
Remove from canner, set aside overnight.
Check for seals, label and store in cupboard.
