The fruits available during the autumn are a delight. These fruits include apples,pears and berries of all types. The best time to eat fruits is in the daytime, favorites are strawberries. The mornings in autumn, especially November, are frosty. Berries are included in a gelatin making a dessert-like lunch. Hot steaming coffee with soy milk and a little sugar substitute or a low calorie flavored energy drink will make the meal sweeter.
Diet Sweet Fruit Lunch
1 small package unflavored gelatin
1/4 strawberry extract (for flavor)
1 cup boiling water
8 frozen strawberries (for best results, put the fresh fruit in the freezer for three hours)
Place water and strawberry extract in the microwave until boiling. Add the entire package of unflavored gelatin and frozen strawberries.
1 cup soy milk
1 diet angel food cake (fresh and frozen according to directions)
8 oz. of cream cottage cheese
Break diet angel food cake into small pieces and combine with strawberry gelatin. Put milk and cottage cheese in the blender and liquefy until they have a smooth consistency. Pour over diet angel food cake and gelatin combination. Chill in the refrigerator. Top with diet whipped cream.
