Candlelight Supper Broccoli Cheese Soup
Serves 6-8
1/2 cup butter
1 yellow onion, chopped
1 - 16 ounce package frozen broccoli, chopped
-Or- 2 cups fresh broccoli, chopped
4 - 14.5 ounce cans chicken broth
1 cup sharp Cheddar cheese, shredded
1 cup Colby Cheddar cheese, shredded
1 1/2 cups heavy cream
1 cup white wine or low carb chicken broth
1 tablespoon garlic powder
2/3 cup cornstarch
1 cup water
Melt butter in a stockpot. Sauté onion in butter until softened. Stir in broccoli and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes. Reduce heat, and stir in cheese until melted. Add cream, wine and garlic powder. In a small bowl, dissolve cornstarch into water. Stir into soup and cook, stirring frequently, until thick. Serve hot with Homemade Broccoli and Cheese Cornbread.
Homemade Broccoli and Cheese Cornbread
Serves 6-8.
1 cup all purpose flour or low carb coconut flour
1 cup yellow cornmeal or 1 cup ground almonds
3 tablespoons sugar or Splenda
2 1/2 teaspoons baking powder
1 teaspoon sage
1/2 teaspoon salt
1/2 cup milk
2 eggs
1/2 cup cottage cheese
1/4 cup sharp cheddar cheese
1/2 cup cooked broccoli, diced
1/2 cup yellow onion, diced
1/3 cup butter, melted
Preheat oven to 350 degrees. Grease an 8 x 8 inch square baking pan. Combine flour, cornmeal or almonds, sugar, baking powder, sage, salt, milk, eggs, cottage cheese, cheddar, broccoli, onion, and melted butter and mix well. Pour batter into prepared pan. Bake at 350 degrees for about 40 minutes until golden.
