During these hot days, we're always looking for ways to keep our homes cooler, especially the kitchen. It's been said that one of the best ways to keep the inside of our homes cool is, of course, to use the range as little as possible. Still, you want to be able to have good food and keep the kitchen cool (as well as conserving energy, which in turn saves money). And with many of us watching our pennies, that's not a bad idea!
Here are two desserts that are not only delicious and perfect for summer, but they require NO baking! The "Hawaiian Pudding" is tastes much like a Banana Split and is easy to do. The only heat needed for it is melting the butter for the crust, which can be melted in the microwave. It's a layered dessert that will taste fabulous over the summer. This is a great dessert to have if you having company and are using an Hawaiian theme. It's also a make-ahead dessert, so it will be a recipe to have handy when you have other things going on.
Even easier is the "Creamy Pineapple Pie", which can be also be prepared quickly and like the "Hawaiian Pudding", can be made well ahead of time for serving. If you wanted to use the sugar-free version of the instant pudding, you could very easily. You could also use the reduced-fat sour cream and the dessert will still taste good and be lighter in calories. Also, if you have a young person in your life who is a beginning cook, these recipes are easy enough for them to make, as they are easy and require minimal supervision.

Save energy (yours and the electricity's!) and make a dessert without having to use the oven!
- 2 Cups Vanilla Wafer Crumbs
- 1 stick Butter, melted
- 3 large Bananas
- 1 Can Sweetened Condensed Milk (such as Eagle Brand Milk)
- 1/2 C. Lemon Juice
- 1 small can Crushed Pineapple, drained well
- 1 10 oz. carton Whipped Topping, thawed
- 1-1/3 cups flaked coconut
- 1/2 C. Chopped Nuts
- 1 small jar Marachino Cherries
Mix the vanilla wafer crumbs with the melted butter; press into a shallow 10x8 inch baking dish (about 1-1/2 quart size); slice the bananas over the crust; Mix the milk with the lemon juice until smooth and thick and spread over the bananas; spread the crushed pineapple over the milk mixture; spread the whipped topping over all; sprinkle with coconut, then the nuts; arrange cherries over the entire top; cover and chill at least 4-6 hours before serving. Serves 8.
EASY PINEAPPLE PIE
- 1 package Instant Vanilla Pudding (4-serving size)
- 2 C. Sour Cream (1 pint carton)
- 1 medium sized can (about 15 oz.) Crushed Pineapple, NOT DRAINED
- 1 store-bought graham cracker pie shell
- Whipped Cream and Maraschino Cherries for garnish (optional)
Combine the first three ingredients until mixed well and turn into pie shell. Top with whipped cream and maraschino cherries, if desired; let chill 4-6 hours before serving. Serves 6.
