Deciding to eat a plant based diet does not mean you have to eat a bland diet. You can still eat some of your favorite comfort foods, you just have to ‘veganate’ them. You should take all vegan non approved foods out of the recipe and substitute it with a vegan approved food.
A favorite food if many is rice pudding. It is a food that is typically missed when eating vegan. Thanks to coconut milk, it is now possible to make creamy, rice pudding that will taste as good, if not better, as it did using milk products
First, make 1 and half cups of rice. I use brown rice because it is healthier. Prepare the rice as the instruction call for. I believe it is three and half cups of water per 1 and half cups of uncooked rice. Once the rice is cooked, add 2 cans of coconut milk one sweetened and one unsweetened. This is found in the same area of the grocery store as the condensed milk. Some grocery stores will carry condensed coconut milk. If they do, use one can of that instead of sweetened milk.
Stir in one cup of organic sugar, preferably brown and a few cinnamon sticks. You can add raisins, walnuts or almonds to add more flavor.
Allow to cook on low to allow the sauce to thicken and the rice to cook thoroughly. Remove from the heat and serve. It should make about eight servings.
