If you're anything like me, the holiday season has left you less than entranced by the idea of cooking yet another huge meal for a holiday get together. New Years Eve is a special one though, and it's a day that I usually reserve quick-to-make hors d'oeuvres for (the night was made for snacking between drinks). Here, a list of a few things I love to make, or will be trying out for New Years!
SpaBettie's Caramelized Onion Buffalo Tarts filled with Buffalo Dip
This recipe calls for Soy Curls. If you've never used them, they're fantastic. If you haven't (or can't find them), homemade or store-bought seitan will work just as well here.
Earth Balance's Jackfruit Carnitas
If you've never tried using jackfruit as a meat substitute before, now is the time. It's relatively easy to do (and you can buy a can at any Asian supermarket). I've tried a lot of jackfruit carnitas recipes, but this is my favorite.
Nachos. Made healthy. Enough said.
Oven-roasted Bruschetta-stuffed Baby Bellos
These come together fast (even quicker if you want to use store-bought bruschetta!) and are a healthy bite-sized snack. A Philly Veggie original!
