Delicious Spinach? YEP!


It's delicious and good for you!

So we all know Popeye got strong off of eating this stuff out of the can but let's face it. Canned spinach is slimy, smells funny and tastes...well, it just doesn't taste good. This recipe is short and sweet and will get everyone around the table eating their greens in a flash!

1 lb washed fresh spinach
½ yellow onion, diced
2 T golden raisins
2 T pine nuts, toasted*
olive oil, as needed
salt and pepper, to taste
Preheat large saute pan on medium heat and toss in the pine nuts. Stir occasionally and when they begin to turn golden brown remove from pan and allow to cool. Return pan to heat and add enough olive oil to thinly coat the bottom – heat until shimmery. Add onion and saute until soft and translucent - about four to five minutes. Add spinach, salt and pepper and saute spinach until it just starts to wilt. Add raisins and toss to heat through.  
* Toasting nuts (almonds, walnuts, pine nuts, pecans, etc) releases their essentials oils and improves their flavor like crazy!

    Do you have to do something to the raisins before you add them to the spinach? like soak them or something?

    Hi Jane, no need to soak them in hot water ahead of time. Their brief time in the saute pan with the moist spinach is enough to slightly soften them.
