Grilled BBQ chicken served over a tossed salad
Labor Day weekend is here! Whether you are a guest to an outdoor cookout or the host/hostess of your own party, try these quick recipes that are crowd pleasing and waistline friendly.
• Grilled Taco-Barbecue Chicken (270 calories) - Tip: If you are watching your sodium, just use the Old El Paso 40% Less Sodium taco seasoning mix
• Tossed salad or vegetable tray with light or reduced calorie dressing on the side
Peaches and Cream (from Bridgette’s Kitchen)
8 oz. Cool Whip Free
1 (4 serving) box of Sugar Free Fat Free Lemon Jell-o pudding mix
2 cans of Del Monte No Sugar Added Peaches, drained
In a large bowl, combine cool whip and pudding mix and beat well. Then, fold in the fruit until well blended.
Allow to chill for about 2 hours before serving. You may chill overnight for best results. Makes 6 – 2.5 oz. servings
Calories per serving = 109 calories
Spicy “Fat-Free” BBQ beans (from Bridgette’s Kitchen)
2 (16 oz.) cans Bush’s Great Northern Beans, rinsed off and drained
1 small can of Ro*tel tomatoes (original)
1 cup of KC Masterpiece low-cal BBQ sauce
1/2 cup water, if needed
Lightly spray a Dutch oven pot with non-stick cooking spray. Drain and rinse off beans. Add the beans, Ro-tel, BBQ sauce and water. Reduce heat, let simmer until all heated. Makes 6 (about 3/4 cup) servings
Calories per serving = 128 calories
