It is that time of year when Girl Scouts cookies will be for sale and we just can’t help ourselves by ordering not just one box but two or three boxes of those delicious cookies.
Instead of just eating them with a tall glass of milk, you can find other recipe ideas to make something tasty with your Girl Scout cookies.
There are a lot of flavor choices when making this Cookie Ice Cream Pie. You can combine your favorite Girl Scout with a ice cream and candy. Another recipe idea is to simply make a hot fudge sundae and top with your favorite Girl Scout cookie toppings.
The ingredients to all most all the recipes you will find can be purchased at any local grocery store in the Gainesville area.
Toffee Cookie Ice Cream Pie:
Prep Time: 30 minutes
Freeze Time: 4 hours
Total Time: 4 hours, 30 minutes
Ingredients:
1-1/2 cups Girl Scout cookie crumbs (Shout Outs!) were used in this recipe
5 tablespoons butter, melted
1 quart ice cream (Natural Vanilla-Breyers) is used in this recipe - softened
3/4 cup crushed candy (Heath bars) were used in this recipe - divided
Preparation:
It is best to prepare this recipe day before.
Either in a food processor or use a rolling pin and put the cookies in a zip lock bag (make sure all the air is out when you seal the bag) Combine cookie crumbs and melted butter. Press into 8 or 9-inch pie pan and chill.
Combine softened ice cream and 1/2 cup candy. Spoon into mixture onto chilled crust and immediately freeze completely in airtight container. Freeze at least 4 hours. Garnish with the rest of the crushed candy when ready to serve.
Alternate flavor suggestions:
Cookies: Do-Si-Dos – (Peanut Butter Sandwiches) with chocolate ice cream and Reese’s peanut chocolate-covered peanut butter candy.
Mint Chocolate Chip Ice Cream Sundaes:
Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients:
2 Girl Scout cookie crumbs (Thin Mints) were used in this recipe
2 scoops ice cream (Mint Chocolate Chip-Breyers) is used in this recipe
2 tablespoons hot fudge sauce (Hershey’s Hot Fudge-jar topping) is used in this recipe
Optional toppings:
Whipped cream
Nuts
Cherry
Preparation:
Heat the hot fudge as directed. Scoop two scoops of ice cream into a bowl. Then add hot fudge and cookie crumbs. Top with additional toppings if you choose. Enjoy!!
