Delicious low-calorie dips for summer

Create delicious, hearty, and spicy low-calorie dips from home. Use a low-calorie cottage cheese, blend with spices or garlic for added flavor.

Garlic cottage cheese dip:

3/4 cup of low fat cottage cheese

2 cloves of minced garlic

1 teaspoon of minced onions

1/4 cup of chopped celery

2 tablespoons of Extra Virgin Olive Oil

1 teaspoon of kosher salt

1 teaspoon of black pepper

Directions:

1. Heat frying pan on medium heat; add olive oil.

2. Sauté garlic, onions, and celery until light brown.

3. Sprinkle contents with salt, reduce heat, add pepper and stir.

4. Allow contents to cool; incorporate all ingredients with cottage cheese.

5. Place dip in a small dish; dip with crackers or any flavor of chips.

Cracker dip: Low-fat Hawaiian cottage cheese dip

3/4 cup of low fat cottage cheese

1/4 cup of diced pineapple chunks (drained and rinsed)

1/4 cup of mandarin orange slices (cut in small quarter pieces)

1/4 cup of chopped almonds

1/2 teaspoon of kosher salt

1/2 teaspoon of red pepper flakes

Directions:

1. Place chopped almonds onto a cookie sheet.

2. Toast almonds in an oven at 275 degrees for approximately ten to fifteen minutes.

3. Remove almonds from the oven; set aside to cool.

4. Mix all ingredients together with cottage cheese, place in a small dish and dip with graham, Ritz brand, or saltine crackers.

Italian cottage cheese dip:

3/4 cup of low fat cottage cheese

1/4 cup of feta cheese

1/3 cup of shredded Parmesan cheese

1 teaspoon of black pepper

1 teaspoon of white pepper

1 clove of minced garlic

1/4 cup of minced red onions

1/4 cup of minced parsley flakes

1 teaspoon of oregano powder

1/2 teaspoon of garlic powder

1/4 cup of balsamic vinegar

2 tablespoons of extra virgin olive oil

Directions:

1. Heat extra virgin olive oil in a frying pan on medium heat.

2. Add red onions, parsley flakes, oregano powder, garlic powder, balsamic vinegar and garlic.

3. Simmer and sauté all ingredients until golden brown; set to the side to cool.

4. Mix white pepper, feta and Parmesan cheese in with cottage cheese.

5. Stir in frying pan contents; place dip into a small dish.

6. Garnish with black pepper; serve with crackers or any flavor of chips.

Additional Tips:

2. Don't have chips: Use pita bread or soft tortillas instead. Preheat oven to 275 degrees. Cut pita bread or soft tortillas into triangle shapes or squares. Line a cookie sheet with aluminum foil, coat foil with corn oil. Place bread pieces two inches apart onto the cookie sheet in columns and rows and bake for approximately ten to fifteen minutes.
