Corn fritters are easy to make and very versatile. You can eat them as a snack or serve with tomato soup, salsa or beef stew. Play around with adding ingredients such as shredded cheese, diced jalapeño peppers or finely diced black olives. Enjoy!
2 cups sweet corn kernels
1 1/2 cups flour
1 tsp baking powder
1/3 cup milk
1 tbsp vegetable oil
If sweet corn is fresh, boil for 2 minutes, drain. If corn is from a can, omit boiling, just drain.
Whisk together flour, baking powder, eggs and milk.
Stir in corn kernels.
Season with salt and pepper.
Fry large spoonfuls in cooking oil over medium heat, until bottom is golden and fritter is cooked through.
