I became a fan of chocolate mousse pie when I was a waitress in one of the local coffee shops in Boise. We always had a half hour break at the restaurant during our shift, and if I had had a particularly stressful night, I treated myself to a slice of the frozen chocolate pie. (Sounds cliche, but true and oh so helpful in getting my "happy" endorphins back on track.)
Recently, I've felt so inclined to experiment with an easy chocolate mousse pie recipe or two, and I've created a variation of Paula Deen's frozen chocolate mousse pie recipe to create one that I like. Instead of the chocolate creme liquer she recommends in her recipe, I go with some Kahlúa since I love the coffee flavoring. And I also make it with an Oreo cookie crust for some extra chocolate kick! And finally, to make it completely yummy, I top it with a little whipped cream and chocolate chips or chocolate shavings for added flavor and fanciness. It's one of those dessert recipes with chocolate chips that turns gourmet with just a few simple additions.
Delicious Chocolate Desserts: Easy chocolate mousse pie recipe with Kahlúa
Ingredients:
- 2 c. semisweet chocolate chips
- 1 quart, plus 3 Tbsp. heavy cream
- 1 Tbsp. Kahlúa
- 1 tsp. vanilla extract
- 3 c.s powdered sugar
- 1 Oreo cookie crust (click here for the recipe)
- Chocolate chips or chocolate shavings
Directions:
- Make the Oreo cookie pie crust, following the directions in the video. To amend it for this recipe, when you get ready to pop it into the oven to bake, poke holes in the pie crust, then bake it.
- Once the cookie crust is done, let it cool for several minutes before proceeding with the easy chocolate mousse pie recipe with Kahlúa.
- Cook the chocolate chips, 3 tablespoons of the heavy cream and the Kahlúa together in a medium saucepan. Let the mixture cook until it's smooth; it should take about one minute. Then add the vanilla extract. Mix this into the chocolate and liquer mixture and then let cool.
- Combine the sugar and 1 quart of the heavy cream in a mixing bowl. Whip the mixture in the same way you would if you were making whipped cream. Fold the chocolate sauce slowly and carefully into the cream sauce.
- Add the chocolate and Kahlúa mousse mixture into the pie shell.
- Cover the pie and freeze it for several hours. Overnight is even better.
- Once you take it out, pipe whipped cream on top and then sprinkle some chocolate chips or chocolate shavings on top of the pie. Put it into the fridge until you are ready to serve the pie.
Tips:
This is a pretty dessert, so if you have some place you need to go where you're required to bring along a dessert, consider this one. Make sure that you serve the pie so it looks as lovely as it tastes!
