Delicious chocolate chip lava cookies

If you are still looking for a fun dessert to make for your sweetheart on Valentine’s Day, try these amazing chocolate chip lava cookies with ice cream.  They are simple to make, yet they look delicious and taste even better!  

Chocolate Chip Lava Cookies with Ice Cream

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 stick butter
  • 1 egg
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup flour
  • 1 cup oatmeal
  • 1 bag semi-sweet chocolate chips, divided (use as many or as little as you desire!)

Place approximately 1/2 cup chocolate chips in a ziploc bag and seal tightly.  Place the bag in the microwave for 30 seconds.  Flip over and heat for an additional 15 seconds.  Continue heating 15 seconds more per side until the chocolate chips are completely melted.  Set the bag aside to cool.

In a large mixing bowl cream butter, sugar and brown sugar. Add the remaining ingredients to the bowl and stir well.

Take a spoonful of dough and flatten slightly.  Press gently into the bottom of an ungreased muffin tin.  

Snip a tiny bit off the corner of the ziploc bag holding the melted chocolate.  Squeeze a small amount of the melted chocolate over the cookie dough in the muffin tin.  Take another spoonful of dough and after flattening slightly, place on top of the melted chocolate.

Repeat until all the sections of the muffin tin are full.

Bake at 350 for 15-19 minutes or until the edges are slightly brown and the cookies appear done.  Use a knife to loosen the edges of the cookies/muffins.  Allow to cool completely before removing them from the pan.  When cool, use a knife to gently slide them from the pan if necessary.  They should come out quite easily.

Heat the cookie for approximately 10 seconds.  Add a scoop of vanilla icecream and a drizzle of chocolate sauce, and you have a simple, yet elegant-looking dessert for your lucky Valentine!

This is the recipe I used to make the lava cookies, but I’m sure you could easily substitute your favorite chocolate chip cookie recipe!
