Delicious breakfast hash with bacon

Breakfast hash is often on the menu at restaurants in the South. It is a great meal that combines everything you want for breakfast in one pot.

The following hash combines potatoes, onions, red peppers, scrambled eggs, bacon and delicious spices. It is a wonderful dish that will impress all of your friends. The best  potatoes to use are Ore-ida southern style hash browns. You can find them in the frozen food aisle of Meijer in Lexington. They are cut small and perfect for this hash. Enjoy! 

Breakfast Hash with Bacon

Ingredients

4 slices of bacon, chopped into small squares

3 tablespoon butter 

1 small yellow onion, chopped

1 clove garlic, finely minced

1/2 red pepper, diced

1/4 teaspoon salt

1/4 teaspoon pepper 

16 ounces frozen hash browns, such as Ore-Ida southern style hash browns 

2 sprigs fresh thyme, with the leaves pulled off the stem 

1/2 teaspoon paprika

3/4 teaspoon salt

1/2 teaspoon pepper 

3 eggs

1 tablespoon milk

3/4 teaspoon salt

1/2 teaspoon pepper

1 1/2 tablespoon butter 

Recipe

1. In a large skillet cook the bacon until it is crisp. Set aside. Drain the grease from the pan. 

2. In the same pan melt 3 tablespoons butter. Add the onion, garlic and red pepper. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook 2-3 minutes on medium heat. 

3. Add the potatoes, thyme leaves, paprika, 3/4 teaspoon salt and 1/2 teaspoon pepper. Stir and spread out evenly in the pan. Turn the heat up to medium-high heat. Let cook 5-7 minutes, or until browned. Flip over and cook 5-7 minutes of the other side. 

4. Meanwhile whisk together the eggs, milk and remaining salt and pepper. Whisk well. Melt the remaining butter in a medium size sauce pan. Add the egg mixture and cook on medium heat. Stir frequently. Once the eggs start cooking break them up into small pieces with your spatula. Cook five minutes, or until the eggs are fully cooked and not runny.

5. Add the eggs and bacon to the potatoes, stir to combine. Serves 3-4. Enjoy!
