If your idea of a raw diet consists of carrot sticks and celery sticks, you're in for a real treat. There are so many more exciting ways to serve raw food! This cute video by Fully Raw Kristina will show you a terrific recipe for raw carrot cake cupcakes that will have you whipping out your Vitamix before it's over. This recipe is one of those that makes going raw fun. It's easy, delicious, and definitely craveworthy. I developed my own recipe for carrot cake salad because I missed real carrot cake, and if you want less fat without sacrificing flavor, you might want to try that recipe too.
Carrots lend themselves to both sweet and savory raw dishes. I'm a huge fan of ginger, and it's a great complement to carrots, so I was drawn to this Savory Winter Carrot Ginger Soup from Raw Intentions. It has wonderful sparks of flavor from fresh ginger root, orange bell peppers, and green chili pepper. I avoid mushrooms (and, in fact, all fungus foods), so I leave those out, but you include them if you want, or you could add a chunk of organic sweet potato or a handful of soaked cashews instead before liquefying the mixture if you wanted to replace them with something.

Let's not forget carrot juice, which is one of my favorite ways to consume carrots. Just throw some raw carrots into the juicer, and you're there. You can add other vegetable juices, or juice an apple with the carrots, but plain old carrot juice is good all by itself.
Raw carrot sticks? Well, maybe sometimes, but with all the other tasty choices available, you don't need to eat those carrot sticks unless that's what you really want.
