Delectable beans for spring

Beans are so versatile you can use them in almost anything. You might be used to adding them into a big pot of chili or soup for the winter but as spring arrives there are many dishes you can add them to. 

According to Webmd.com “Our diets tend to be seriously skimpy when it comes to fiber (the average American consumes just 15 grams daily), to the detriment of both our hearts and our waistlines. One cup of cooked beans (or two-thirds of a can) provides about 12 grams of fiber -- nearly half the recommended daily dose of 21 to 25 grams per day for adult women (30 to 38 grams for adult men)."

You can find beans at any local grocery store or even organic at a Whole Foods Market, either way you can turn them into a delicious dish or side dish.

Here are some tips on using beans for spring:

  • Toss into a salad – Black beans are great, add some corn as well and you have a fiesta style salad
  • Add to a wrap or sandwich – You can take the beans and mash them and create a sauce instead of using high calorie mayonnaise. Pinto and Mexican beans work well this way and you can add some avocado adding good fats
  • Bean salad – Take many style beans and mix them in a bowl, they are colorful and tasty. You can add cilantro, olive oil and serve heated or chilled
  • Beans on toast – You can take buttered toast cover with beans cut in 4 corners and eat as a side

No matter how you want to buy your beans fresh is best but canned will do also, however you may want to rinse and drain them. Its springtime, just get creative with beans and enjoy the benefits.
