David's Dumpling and Noodle Bar now open on Hillsborough Street

Updated 08/06/10: David's Dumpling and Noodle Bar is now open.

Some people just can't stayed retired. David Mao, former head chef of downtown Raleigh's The Duck and Dumpling, is one of those people. According to David Bracken of The News and Observer, he's coming out of retirement and starting a new venture called David's Dumpling and Noodle Bar that will serve Asian fare, including his famous dumplings, and will also include a noodle bar.

David's Dumpling and Noodle Bar will take home in the old Darryl's and now defunct Red Hot and Blue location on Hillsborough Street. According to the N&O, price points for the new restaurant will be along more of the casual lines and below that of his former venture The Duck and Dumpling.

For noodles lover like myself, seeing if the noodles, like his dumpling dough, are made from scratch will be interesting and could prove to what separates this restaurant from surrounding Asian restaurants.  Perhaps Mao could be giving Raleigh its own little momofuku noodle bar-- a prospect that certainly merits coming out of retirement.
