Curried rice with onions, apples and raisins

Curried rice is a great addition to a meal. It adds flavor and will please everyone. The apples, onions and raisins add a wonderful sweetness to the rice. 

You can enjoy Indian inspired food, like this rice at many restaurants in Lexington. There is Masala Indian Cusine restaurant, which has curry, masala and tandoori dishes. The food is well priced and delicious. 

For a taste of India at home, make the following recipe. Make sure to look at the package of rice that you are using, and use the amount of chicken broth as it says to use liquid for one cup of rice. Enjoy! 

Curried rice with onions, apples and raisins


1 cup cup basmati rice

2 cups chicken broth 

1 tablespoon plus 1 teaspoon curry powder

1/2 teaspoon cumin 

1 teaspoon plus 1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 tablespoon olive oil

1 apple, peeled and chopped into small pieces

1 small yellow onion, chopped

1 teaspoon, plus 1 teaspoon sugar

1/2 teaspoon cinnamon

1 cup raisins


1. In a medium sized pot combine the rice, chicken broth, 1 tablespoon curry powder, cumin, 1 teaspoon salt, pepper and 1 teaspoon sugar. Bring to a bowl. When it boils stir and cover with a lid. Let cook on low for 20 minutes, or until cooked. 

2. While the rice is cooking, add the olive oil to a medium sized pot. Add the onions and apples. Sprinkle with the remaining curry powder, salt and sugar. Let cook eight minutes, or until they are tender but still have a bite to them. 

3. Pour boiling water over the raisins let sit five minutes, or until they are plumped  up. Drain. Add the raisins and apple mixture to the rice. Stir and serve. Makes enough for 4 people. Enjoy!
