Cupcakes have in recent years become very popular! While they've been around for seemingly for years, we're seeing them show up in places we never thought possible. For one, some people are now having cupcakes for weddings instead of a traditional wedding cake. Also, cupcakes are very decorative. They're not just given a regular coat of icing. They get the full, first-class treatment, covered with exotic icings and sorts of decorations. Cupcakes are not like they used to be!
Let's look at a recipe for a cupcake that's very unusual, but it's very good. Flavored with pineapple and graham cracker crumbs, "Pineapple Tarts" are a most interesting and unusual cupcake. Fun to make, they're a treat that you may want to make with a youngster you have in your home. These cupcakes are sensational for dessert or for a snack and are especially good with a cup of tea or coffee.
You make these treat by creaming butter and sugar. You add egg yolks with chopped nuts and vanilla extract. Then, a mixture of graham cracker crumbs, baking powder and milk are added to the creamed mixture. The egg whites from the egg yolks are beaten until stiff and folded in. This batter is now spooned into paper baking cups and baked. Then, they're topped with a luscious pineapple topping made with crushed pineapple and sugar, which are cooked together, and this is spooned over each cupcake. There you have it.....some luscious cupcakes!
You'll see in the recipe that there's no flour given in the recipe at all, which is correct. The graham cracker crumbs take the place of it. In the pineapple topping, if you want to add chopped maraschino cherries, you can, as this is an optional ingredient. Any types of nuts can be used in these tarts, either pecans or walnuts. Either of them work well and are equally as good.

When the urge to make cupcakes arises, and you want something different from the traditional cupcake, these tarts will certainly be a hit!
- 3-1/2 cups graham cracker crumbs
- 1 teaspoon baking powder
- 1 cup milk
- 1 stick butter, softened
- 1 cup sugar
- 2 eggs, separated
- 1 cup chopped nuts
- 1 teaspoon vanilla extract
Mix together the crumbs, baking powder and milk. Set this aside to soften the crumbs. Meantime, cream together the butter and sugar. Add the egg yolks, nuts and vanilla extract, mixing well. Gradually add the graham cracker mixture. Beat the egg whites until stiff and fold in until mixed well. Spoon into cupcake pans that have been lined with cupcake liners. Bake at 350 degrees for about 15 minutes or until the centers test done. While they bake, prepare the pineapple topping:
- 1 small can crushed pineapple
- 1 cup sugar
- 1/4 cup chopped, drained maraschino cherries (optional)
Place these ingredients in a small saucepan and cook over medium heat for ten minutes. Spoon over the cupcakes while they're hot. Let cool.
