Sprinkles Cupcake Bakery gained fame when they were blessed by Oprah -- so even if you’ve never had a cupcake from Sprinkles, you may have heard of them. Strawberry cupcakes are one of their top sellers, and once you taste one of these amazing little cakes made with fresh strawberries, you will know why. This recipe is from Martha Stewart’s website, and was shared with Martha by Candace Nelson, founder of Sprinkles.
These cupcakes are perfect for any occasion and will be a big hit wherever you take them. To make them look wonderfully, here is a way to frost cupcakes like a professional.
Sprinkles’ Strawberry Cupcake Recipe
Ingredients for 12 cupcakes:
- 2/3 cup whole fresh strawberries (to save time, use ½ cup more so you’ll have enough for the frosting)
- 1 ½ cup flour
- 1 tsp. baking powder
- ¼ tsp. salt
- ¼ cup milk, room temperature
- 1 tsp. vanilla
- ½ cup butter, room temperature
- 1 cup sugar
- 1 egg, room temperature
- 2 egg whites, room temperature
Directions for making Sprinkles’ Strawberry Cupcakes:
Puree strawberries in a food processor. You should have 1/3 cup of puree (use any extra for frosting).
In a small bowl, whisk the flour, baking powder, and salt. Set aside.
In another small bowl, mix together milk, vanilla, and 1/3 cup strawberry puree. Set aside.
In a large bowl, cream the butter. Add the sugar, then the egg and the unbeaten egg whites. Beat everything together just until blended. Add the flour mixture, then the strawberry mixture, alternately. Beat just until blended (don’t overbeat it – this is important). Fill cupcake pans (lined with cupcake papers) with each cup about 2/3 full. Bake at 350 degrees for 21 – 23 minutes. Cool completely before frosting with Fresh Strawberry Frosting (see below).
Fresh Strawberry Frosting Recipe
Ingredients for Strawberry Frosting:
- 3 tablespoons strawberry puree (made by putting ½ cup whole berries in a food processor)
- 1 cup butter
- Pinch salt
- 3 ½ cup powdered sugar
- ½ tsp. vanilla
Directions for Strawberry Frosting:
Cream butter. Add salt, powdered sugar, strawberry puree, and vanilla. Mix just until blended. Don’t eat it all before you frost the cupcakes!
