Cucumber and tomato salad

 

Summer 's here and the time is right for.... salads.  Crisp, cool salads.  They go perfect with all of your summertime grilling favorites, be they hot dogs, brats, hamburgers or chicken.  Whatever your favorite thing to throw on the grill, beat the heat this summer and throw together this easy cucumber and tomato salad.  It uses bottled salad dressing so is super easy to put together at the last minute. The bright colors of the fresh from the garden veggies make it look as good as it tastes!  It's great for picnics at places like Tim's Ford lake because it's as good at room temperature as it is straight from the fridge.  So pack up that cooler and head out for some family time and great cooking!

Cucumber and tomato salad
 

  • 1 cucumber
  • 1-2 large tomatoes
  • ½  of a sweet type or red onion
  • ½ cup of Italian salad dressing

Thinly slice the cucumber.  If it is a large one, you may want to peel and seed it.  Cut the onion into eight wedges, then cut the wedges into chunks.  Cut the whole onion in half, then slice half of it into thin half-moons.  If you don't like onion, or don't want to use that much of it, you can leave it out.  Put the cut vegetables into a bowl and pour the dressing over it.  Toss gently to combine.
