When Dan Frament opened the doors to MudDaddy Flats last fall, the downtown Troy quesadillary had a nice selection of 14 basic breakfast and lunch items.
Actually, that number could be expanded exponentially, depending on which options were selected.
Now, six months later, the fast-casual spot has added something a little different -- the Fister.
It's a crossover between a standard quesadilla and a wrap. The first one is the Roast Beef Fister ($7.25) -- roast beef with mozzarella cheese, lettuce, tomato, and horseradish blue cheese sauce on a habañero salsa tortilla, folded then toasted on the cheese side to give it a little melt. The second version is the Turkey Bacon Fister -- sliced turkey breast, bacon, lettuce, tomato, cheddar jack cheese, and tangy house sauce.
Frament founded the eat-in/take-out spot after a dozen years as a behavioral health specialist who wanted to follow his food passion as a career. The entire menu is available online.
The MudDaddy name comes from a nickname his daughter gave him many years ago when he worked as a stonemason and often came home covered in mud.
