Crock pot sweet and sour chicken

Crock pot meals are great for busy weekdays. Just throw everything in the pot and let it cook, it can't get easier! 

All of the the ingredients in this recipe are available at any grocery store in Lexington. Hoisin sauce is in the international food aisle. It is a condiment that is great to have on hand, it adds to any stir-fry. It is a combination of tons flavor. Soy beans, sugar, garlic and chili peppers are all in most hoisin sauces. It has a strong taste, but combined with the right ingredients it is delicious. 

I use red pepper in this dish, but any pepper would do. If you don't like the peppers too soft, add them half way through cooking. Enjoy!

Crock pot sweet and sour chicken


1/4 cup soy sauce

1 tablespoon cornstarch

1 tablespoon hoisin sauce

1/2 cup ketchup

1/4 cup apple cider vinegar

1/4 cup granulated sugar

1/2 teaspoon ground ginger

1 large yellow onion, chopped into small chunks

2 large cloves garlic,  minced

1 red pepper, chopped into small chunks 

3 chicken breasts, cut into small chunks

1 cup canned pineapple chunks


1. In a medium sized bowl combine the first seven ingredients. Stir and set aside. 

2. Pour the chicken, onion and red pepper into the crock pot. Stir and add the sauce. Let cook 3 hours on high. Add the pineapple and let cook one more hour. Serve with white rice.  Makes enough for four people.
