Summer is coming to a close, but finding new ways to create a dinner that your family will like is never going out of style. Crock pots, slow cookers are such a easy way to create a dinner or even a dessert that your family will love. Pepper steak is a tried and true recipe that parents have been formulating for years. By using a crock pot you cut out the time standing at the stove when you come home from a hard day or having it prepared for the kids when they come home from their various activities such as sports. Now when my family creates this dish we are big on seasoning. Three must haves are garlic, oregano, plenty of crushed black pepper and basil. I like to add the seasonings to the flour mixture and then again into the liquid of the crock pot before I heat the crock pot up. Seasoning to your taste is a definite must. Another way to enjoy this crock pot meal is to serve it with a tablespoon of sour cream dolloped on top of the pepper steak.
Crock Pot Pepper Steak
2 pounds beef sirloin, cut into 2 inch strips
3 tablespoons vegetable oil
1 cube beef bouillon
1/2 cup hot water
1 tablespoon cornstarch
1/2 cup chopped onion
1 (14.5 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
2 large green peppers or red sliced into strips
5 tablespoons of flour
Flavor to taste by adding garlic, oregano, basil, salt and pepper
Place flour into bag and shake sirloin strips with flour. Shake off extra. In a large skillet over medium heat, heat the vegetable oil and brown the seasoned beef strips. Transfer to a slow cooker.
Mix bouillon cube with hot water until dissolved, then mix in cornstarch until dissolved. Pour into the slow cooker with meat. Stir in onion, stewed tomatoes, soy sauce, and salt. Add peppers, two hours before serving. (a bag of frozen cut peppers can also be used)
Cover, and cook on High for 3 to 4 hours, or on Low for 6.
You can serve over noodles, rice or potatoes.
