Here is an easy beef recipe that results in such delicious and tender beef that it seems like it should take longer to make. The caramelized onions and the beer add a fabulous flavor. For those who make gravy, save the juices after the beef has cooked – if there was a stronger word than “amazing”, I would use it for this gravy. Get your crock pot out, because you will want to try this recipe.

Caramelized onions are the result of slowly cooking onions until the water in them evaporates and the sugar in them cooks down to a caramel color. Caramelization changes the taste of the onions to a sweet, nutty flavor.

Crock pot Beef in Beer Recipe:

Ingredients for Crock pot Beef:

  • 1 beef roast (no larger than what fits in your crockpot)
  • 1 12-ounce beer
  • 4 onions (sliced thin to medium)
  • Olive oil

Directions for making Crock pot Beef in Beer:

Put the beef roast in the crock pot, pour the beer over it. Let it sit while you caramelize the onions.

Pour enough oil in a large frying pan to coat the bottom. Heat the oil over medium heat so that the onions sizzle when they are dumped in. Toss the onions so they are coated with the oil. Let cook until the onions soften, then eventually start to brown (turning them occasionally so they don’t burn and are cooking evenly). Once the onions start to brown, lower the heat and let them continue cooking, stirring every minute or two, until they reach a deeper golden brown.

Spoon the onions over the beef in the crock pot, put the lid on the crockpot, then set it on low. Cook for 8 – 10 hours. Remove the beef from the crockpot to a platter, spooning the onions onto the beef. Use the juices to make a fabulous gravy.

Amazing Beef Gravy Recipe: In a large skillet or saucepan, melt 4 tablespoons of butter, whisk in 4 tablespoons of flour. Let cook while constantly stirring for 1 minute. Add 4 cups of the hot beef broth and whisk until thickened. Serve hot over potatoes or rice.
